Well, I've been working on a few of my own and searching all over for others that I can try and I am prepared to show you some of them in this newsletter. Smoked Appetizers and Party Foods
Hello friends and welcome to this Christmas holiday edition of the smoking meat newsletter. If you're anything like me, you get invited to a few parties around this time of year and it's always expected that you will show up with something of the “smoked” variety. I love doing party hors d'oeuvres on the smoker and in this newsletter I'm going to show you my top 5 things … [Read more…]
Smoked Pigs on the Beach – Shrimp & Sausage
The subtle flavor of smoked shrimp combined with the rich flavor of the smoked sausage comes together with a huge flavor burst in your mouth with this wonderful duet of an appetizer. I asked my Facebook fans to help me name this appetizer and while we had more than 800 suggestions, I could only pick one of them. The winning name for this smoked shrimp wrapped around a sausage round is… … [Read more…]
Shrimp & Cream Cheese Stuffed Jalapeños
I have written on several occasions about these glorious smoked, bacon wrapped, cream cheese stuffed jalapeños (known in the smoking community as Atomic Buffalo Turds or ABT's for short). Well.. this week I have taken that same concept and added a jumbo shrimp into the jalapeño pepper just before stuffing it with cheese and they are amazing. Quite easy to prepare and it doesn't take them long … [Read more…]
Miniature Smoked Bacon Wrapped Fatty
The smoked bacon wrapped fatty has been around for a while and it is probably one of the best smoking recipes around. For those not in the know, a smoked bacon wrapped fatty is simply a pound of sausage, rolled out flat, stuffed with cheese, veggies, other meats, whatever the mind can think up, and then wrapped in a blanket of bacon that has been weaved together carefully. It is then smoked for … [Read more…]

Super Bowl parties are the perfect time to bring out the appetizers and these smoked chicken cherry bombs and other smoked super bowl snacks will be the perfect way to celebrate as you cheer your team to victory with your family and friends. I have also included some links to favorite recipes for smoked wings, pulled pork hot dogs, smoked chicken cherry bombs and of course no appetizer or snack … [Read more…]
Smoked Shrimp – Stuffed/Bacon Wrapped
I've written about smoked shrimp and it was really good but it has so much more potential as I have shown in this newsletter. I have taken extra large shrimp and butterflied them, stuffed them with a cream cheese mixture, wrapped them in a half-slice of bacon and then smoked them to perfection. These babies surpassed my every expectation and were everything I thought they could be and … [Read more…]
Pecan Smoked Chicken Wings
There's not too many foods that I like as well as smoked chicken wings and this week, I just couldn't help showing off my pecan smoked chicken wings with honey and beer barbecue sauce! The picture looks good enough to eat in my opinion and you can only imagine how good these babies are in real life. A little sticky and with just the right amount of smoke, the slightly crispy skin is beyond … [Read more…]
Looking for for the recipe of kielbasa or smoke sausage stuffed with cream cheese and slice of jalapeno warped in bacon. I lost it or deleted it
Bill, I think it’s this one.
Hey, Jeff-
Just went to Amazon, via your gateway, and ordered some Ekogrips and an injector, hope you’re still getting the bonus from Amazon. If not, I’d like to know, as it’s much easier to get stuff through my own gateway.
Be well & safe journeys,

Jeff I smoked the cherry bourbon loin everybody loved it
some where can remember if was from u or someone other than u about a tenderloin (pork) wrapped in bacon and then smoked with yours rub or not ?
I have a question, how long should you soak wood chips in water, these are about the size of half your fist. I wanted to get the most smoke. Seems the longer you soak them the less smoke. I’m just want to learn what is the best way.
Thanks
I recommend leaving the wood dry for all smoking. Wetting the wood doesn’t do a lot for the process other than to cool down your coals/fire. Others recommend it but I have never seen a decent reason for using wet wood.
Jeff, I have to tell you I did the Mesquite smoked prime rib for Christmas and it was amazing your rub on this meat just makes the meat melt in your mouth. YOU should start a smoking BBQ school I would attend and so would some of my friends you the best Jeff Merry Christmas and have a great New year………………
