SS Pans with Racks

This is a pan with a rack that I've been using for several years now and they are super nice to have.
These are heavy duty stainless steel, very resistant to warping in heat although I rarely use them in high heat. I typically use them in the smoker at normal smoking temperatures.
The rack holds the food up about ½ inch off the bottom of the pan and the smoke and heat is able to get all around the food easily. Because of this, I can prep my food and place it on the racks in the kitchen then carry it out and place it directly on the smoker.
I cook the food on the rack which sits in the pan.
This helps in several ways:
- Keeps my smoker clean
- limits the amount of time my smoker door/lid is open
- Makes it easy to bring everything back in when it's finished
I have cooked everything from ABT's to whole spatchcocked turkeys on these things and the racks don't swag under the pressure.
First and foremost, order you a set of these. The ones I got come as a set of (2) but the company does have other sizes and packages so if you deviate from the link below, make sure you know what you're getting before you order so there won't be any surprises.
Secondly, get a big roll of heavy duty foil.
I use foil on the bottom of the pans to keep them clean from whatever drips off of the racks. That way, I only have to wash the racks when I'm done.
By doing this, I don't have to clean the smoker grates or the pan, just the rack. That's a LOT LESS WORK and let's just say I'm a huge fan of less work ;-)
To clean the racks by hand:
I recommend using the sprayer on your kitchen sink with full hot water to knock off the loose bits.
Then use a plastic scrubber or even a ball of foil with plenty of heavy duty dish washing soap to knock off the stuff that's more stuck on.
To dishwash:
I rinse mine under a hot water spray just as soon as I'm done with it then give it a 15 second once-over with a plastic scrubber. Once I'm ready to run a load of dishes in the dishwasher. I place the racks into the bottom dishwasher rack and 9 times out of 10 it comes our sparkling.
If you have one of those super high efficiency dishwashers that's more concerned with saving you water and electricity than getting the dishes clean, you might want to spend a little more time on it initially and let the dishwasher have a go at it.
I personally prefer to wash them by hand and that's usually what I do.

And it definitely taste the same as of being directly on the grates? I love the taste of smoked anything, just wouldn’t want to lose it.

How well will these racks fit into the Bradley smoker?
Dale, the size that I use will not fit in the Bradley as you only have about 11″ x 13″ to work with. Also, because of how the Bradley smoker is designed, it is not recommended to use pans with racks as that will block the flow of heat and smoke. I have used very small pans at times since the heat and smoke can flow around the sides but the Bradley owners manual discourages this.
I’ve been using racks for smoking for years, but not all the time. It seems that whenever I use the rack, the cook time is longer. This is especially true of ribs. Have you had a similar experience?
