Barbecue is something that anyone can learn to do with a little patience and perseverance.
I am your host, Jeff Phillips of Tulsa, Oklahoma and I will describe in detail on the following pages how to smoke brisket, ribs, turkey, pork shoulder and salmon along with valuable information on making your own rubs and homemade sauces.
Before we start the process, I recommend that you acquire a decent smoker.. preferably one that burns wood or charcoal, a good meat thermometer, an apron and some cooking gloves.
I started out with a small upright brinkmann smoker and it served me very well for many years. You can pick up one of these for less than $50 at your local shopping center, through Amazon online or you may even be able to locate a used one at the local flea market or garage sale for just a few dollars.
If you have a grill then it can also be used with a few modifications.. you will need to build the fire to one side and place your meat as far from the fire as possible since smoking meat is all about cooking the meat low and slow unlike grilling where steaks and burgers are seared at very high temperatures
I also recommend that you join the smoking meat forum and sign up for the free smoking meat newsletter if you are truly serious about barbecue and smoke flavored meat.
